Chocolate Christmas Cupcakes
I made these for my work colleagues at our Christmas function.
Traditional fruitcake with the addition of dark chocolate & cocoa, treated to a splash of feijoa vodka while still warm. Finished with almond buttercream & white fondant they were individually wrapped in cellophane bags.

Pink Elephant's do exist!
One of the things I adore about baking for others is the way it makes them happy... even if I think I've done an average job of it.
I decided to make a surprise cake for a friend's birthday, now this is nothing amazing... but I did decide only a couple of days before and knew I had to send it a few hour south on a courier! The birthday girl loves pink and all thinks cute... so a pink elephant atop a polkadot fondant base seemed fitting. I used the same Lemon Cake recipe that I used in my layer cake, split & filled with lemon curd & buttercream before covering with fondant.
The reaction & reports were positive and apparently only one ear was damaged on the trip! :p
