30th Birthday Cake


I made this cake for a dear friend who has moved to the states, but happened to be back visiting over Easter and for her 30th Birthday. I wanted to make something bold & classy... and of course it had to feature ginger flavour!
I went with a caramel mud cake with a hint of ginger in it, layered & covered with white chocolate buttercream... and some hidden crystalized ginger in between the layers.

I handmade the roses and allowed them to dry overnight, cut out coloured fondant circles and placed them over the white fondant.
The '30' is made from wooden numbers which I painted black then covered with individual sticker backed diamante's.
